Let’s get this out of the way right off the bat. These muffins are gooooood. They might be healthier for you (6 Weight Watchers SmartPoints per muffin) but good luck stopping at just one. I filched this recipe from Weight Watchers after my attempts to cut down in the baked goods resulted in these and these. Now, I figure, if I’m going to bake I might as well make better-for-you options that I can wrap individually and freeze for weekday breakfasts and not, you know, eat a dozen cookies in a sitting waste food. I’ve been eating these for breakfast to switch up my routine and they’re quite filling and full of banana goodness. You can make these with or without lemon icing. I think the icing takes them from breakfast status to cupcake status. That’s not to say that cupcakes for breakfast would be entirely wrong. It’s just not what I’m going for here. So the icing is optional and will add Weight Watchers points, if you’re into that kind of thing.
