You have a party to go to and you’d really like to bring your hostess a gift but you don’t want to spend money (admit it). That’s where miniature quick breads come in. You need a gift for that friend who has everything. You have a baking itch Tuesday afternoon but you’d rather save your cake-and-cookie calories for Saturday night. Again, time to turn on the oven. In any event, miniature quick breads are a great solution when you need a quick gift or want to send your guests home with an edible treat after your next get-together. One of these miniature loaves is the perfect size to cut a slice of for a snack or breakfast. You can present them wrapped in foil or plastic wrap but a much nicer way to deliver these goods is to bake them in paper loaf pans. Wrap them in cellophane and you’re good to go. You can even bake a batch of these and stash half in the freezer so you’re never without a homemade snack on hand.

If you look, at any given time on my kitchen counter, you’ll find bananas. And if you’re lucky, you’ll find chocolate chip pecan banana bread. Bananas are a shopping list staple for this single girl. Even more so now that I have this recipe, now dubbed as ‘monkey bars’ in my repertoire. Bananas are healthy, compact and versatile – you can pop them in cereal, eat one before a workout or transport in your purse for an on-the-go potassium fix. The problem with bananas is that their window of ripeness is small. There is a very limited period between the time when bananas begin to fade from pale green to perfectly yellow to the point where their skin becomes a myriad of brown blotches, too soft to the touch. When I buy bananas, I always purchase bunches of four or five. Even though I don’t have growing kids or a husband with a bottomless appetite, I always have good intentions of eating one a day. Breakfast, pre-gym, afternoon snack….easy! Plus, one of the most commonly searched phrases that people use to find my blog is “is banana bread bad for you?” So, to come right out and answer that question, it’s not exactly […]

When I was in college I lost some weight on Weight Watchers. The program was excellent and I saw the results I wanted but looking back, my diet consisted almost entire of highly processed foods full of chemicals in attempt to eat fewer calories. I participated in a community message board where I, along with a group of women all losing or maintaining weight, would post our daily menus for accountability. At first I was embarrassed that I relied on this anonymous Internet support to keep my diet under control, but eventually I realized that I was picking up valuable weight loss tips, healthy recipes, and as a result I participated in the group for several years. It was this group that finally led me to a perfect, easy banana bread recipe. In my opinion, the healthiest foods and recipes have real ingredients in additiob to a lot of flavor. Sometimes people equate food as being healthy as a result of being “low calorie.” Though that’s certainly true in some cases, it can be the opposite for foods that have been chemically altered in order for calorie reduction. If real, natural food is available to me, I’ll almost certainly choose that in a […]

Even though the internet is my mecca for recipe-finding, I have amassed quite a few cookbooks over the past few years. Some were inherited from my mom, who finally admitted that she’ll never use them, some I received as gifts when I began to show an active interest in the kitchen and there are a few that I have actually purchased on my own. Of all the books and cooking magazines lining the shelves in the breakfast nook in my apartment (and believe me, there are piles. “I know I’ll make that someday, so I better keep this”). The Better Homes & Gardens New Cookbook is chock-full of classic recipes. Most of them are fairly basic, so I can doctor them a little to add my own twist on the comforting soups and breads and cookies that remind me of watching my mother browse my grandmother’s big brown recipe box. There are also plenty of photos and instructions for skills that I’ve yet to master: making pastry dough, roasting chickens and stuffing pork loin. I love the nostalgic feel of the photos in the book. A far cry from the flashy, modern food photograph we’re used to today, but charming nonetheless. […]
