There is no excuse needed to whip up the most simple summer cocktail known to man on a warm summer day, but if you feel like you need one, we’ll be happy to provide a few: the day of the week ends with a y, it’s the weekend, it’s not the weekend, it’s almost the weekend, the weekend is over. See how easy that is?
There is something about the sunshine and a warm breeze that makes people crave fresh juices, potent spirits and of course, pretty paper straws. So much that the ubiquitous reference term “summer cocktails” should probably be officially named a food group. Because trying crafted mixed cocktails at bars and restaurants can get expensive quickly, I’m a fan of making cocktails for friends at home.
We all know that it’s really, really easy to open up a bottle of wine and call it a day. I’ll never discourage you from doing that, by the way. It’s also really, really easy to follow this formula:
Two parts whatever juice you happen to have in the house + one part sparkling water or club soda + one part vodka, gin or tequila. Serve in your twee-est glass with patterned paper straws and no one will ever invite you over again because they’ll always want to come to your house.
- 1 cup fresh or bottled blueberry pomegranate juice
- ½ cup vodka (or spirit of choice)
- ½ cup sparkling water or club soda
- Combine vodka and blueberry pomegranate juice and divide among two ice-filled glasses. Top each with sparkling wine, and garnish with fresh blueberries or pomegranate seeds.
