Roasted Tomatillo Guacamole

If I were ever stranded on a desert island and could pick three foods to have with me, avocados would be one of them. You can do so many things with an avocado from puree them for baking, slice them for sandwiches and salads and of course, mash them for guacamole.

This recipes comes from the Dana Treat kitchen and the primary reason I’m sharing it with you here is because I don’t think people use tomatillos enough. Maybe I’m speaking for myself, but in all their husked glory, tomatillos look like they’d be tricky to work with when that couldn’t be further from the truth.

The outer husks peel off quite easily, the skins are a little tougher than tomatoes’ and though the exterior is a little bit sticky, that will disappear with a quick rinse or a spritz with fruit and vegetable spray. Green tomatillos are smaller than tomatoes and easier to slice. The flesh is slightly acidic and will add a nice citrus kick to any recipe.

Enter: guacamole. I didn’t think it was possible to like guacamole any more but this one has a nice citrus kick from tomatillos and lime juice. Jalapenos for heat and red onion for crunch make this absolutely addictive.

Roasted Tomatillo Guacamole

Ingredients
  • 6 medium tomatillos, husked and rinsed
  • ½ small red onion, finely diced
  • 2 jalapeno peppers, seeded and finely diced
  • Juice of 2 limes
  • 2 tsp. salt
  • Few grinds black pepper
  • 2 large avocadoes
Instructions
  1. Preheat the oven to 425 degrees.  Place the tomatillos on a small baking sheet and into the oven.  Roast until they turning brown and starting to deflate, about 12 minutes.  Remove from the oven and allow to cool.  Roughly chop the tomatillos.
  2. In a large bowl, combine the onions, peppers (if you like your guacamole really spicy, feel free to leave in the seeds of one or both the jalapeno peppers), chopped tomatillos, and the avocadoes.  Using a potato masher or a large fork, mash to a chunky puree.  Squeeze in the lime and add the salt and pepper.  Either continue to mash (for a smoother consistency) or use a spatula to mix well.  Taste and adjust seasoning as necessary.

    I actually found that the juice of 2 limes was too much in this recipe – perhaps the avocados I used were too small or the tomatillos too large? Other than that I think it has great potential! Next time I’ll proceed very cautiously with the lime juice and just add a tablespoon or two. As you said, the tomatillos already add a little citrusy flavor.

    I love avocados and tomatillos! I’ll have to try them together. I make enchiladas verde every spring using a really simple tomatillo salsa and I’m excited to make it again this year. Your roasted tomatillo guacamole will be a great appetizer to go along with it!

    This looks like a great dip but I’ve not seen tomatillos here in Sydney. I do love a simple avocaodos on toasted bread with a little salt and black pepper.

    This looks so delicious, Maris, and I love your addition of tomatillos! Right up my alley. I had a total guacamole disaster yesterday, by the way (all those avocadoes… so sad!). Let’s just say, don’t ever try and make it in a food processor. Even with the freshest, most colorful produce you’ll end up with soupy, brown sludge. :'(

    I don’t think there is a such thing as too much avocado, I do love using those tomatillos too. Wish I had whipped this up yest., maybe this weekend. Hope you have a good one.

    I discovered tomatillos a few years ago and since have loved them! This is one way I haven’t eaten them. I’m imagining the creamy avocados with the acidity. Delicious!

    I would definitely bring avocados with me as well; they’re one of my absolute favorite foods. This guac looks delicious! I’ve never used tomatillos in my recipe. Happy Cinco de Mayo. 🙂

    Yum. I adore guac anyway, and I love the addition of tomatillos. I had a fantastic Rick Bayless recipe I made quite awhile ago that was a simple salsa that included tomatillos and I absolutely adored it. Additionally, last year I found some gorgeous purple tomatillos at the Green City Market. I hope they show up again this year because combined with some purple peppers & potatoes it made my day. 🙂
