Haha, I hear you on the strategic baking! On the rare occasions that I do bake, I usually cut recipes in half (or in quarters). But with these cookies, maybe I could make a whole batch, since they are so healthy… and oatmeal cookies can double as breakfast, right? 😉

Even without the icing, those look delicious! Sometimes icing makes things too sweet for me anyway, so I’d probably have them just like this.

Great post, bet you can eat a handful of these without feeling guilty. I was thinking of making an applesauce cake. I finished all of my choc chip cookies and it’s time for something different;-)
