Warm Cranberry Compote on Biscuits

- Warm Cranberry Compote
- 1¼ cup fresh cranberries (or: substitute frozen)
- ½ cup water
- ⅓ cup brown sugar
- ⅓ cup brandy (optional)
- 1 teaspoon cinnamon
- zest of one large orange
- 4 The Laughing Cow Creamy White Cheddar Flavor spreadable cheese wedges
- Whole wheat crackers or biscuits
- Place all ingredients in a saucepan over medium-high heat. Stir until cranberries are thoroughly coated.
- Cook until cranberries begin to pop, stirring occasionally, until mixture has thickened.
- Spread a thin layer of The Laughing Cow cheese over a savory biscuit or cracker (I like Carr's Whole Wheat Crackers).
- Top with a spoonful of compote and serve immediately.
