Roasted Turkey Breast

Ingredients
  • 1 whole bone-in turkey breast (6½ to 7 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons ground mustard
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh sage
  • 1 teaspoon chopped fresh thyme
  • 1½ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • ¾ cup dry white wine
Instructions
  1. Preheat the oven to 325 degrees F.
  2. Combine the olive oil, garlic, lemon juice, mustard, rosemary, sage, thyme, salt, and pepper in a small bowl.
  3. Place the turkey breast on a rack in a roasting pan, skin side up. Rub the mixture evenly all over the skin of the turkey breast and underneath any loose skin, directly on the meat. Pour the wine into the bottom of the roasting pan.
  4. Roast the turkey for about 1½ to 2 hours, until the skin is golden brown and an instant-read meat thermometer registers 165 degrees when inserted into the thickest area of the turkey breast. If the turkey appears to be over browning, cover it with a foil tent.
  5. When the turkey is done, remove it from the oven, cover the pan with aluminum foil, and allow the turkey to rest at room temperature for 15 minutes. Slice and serve warm. Refrigerate leftovers for up to three days.
