May is National Burger Month. Based on how I’ve been eating lately I would have preferred that May be called National Iced Cream Sandwich Month or National Chips and Guacamole Month, but burgers are a pretty excellent choice, too.
As you can imagine, the Internet is chock full of epic burger recipes, piled high with fried onions, blueberries, caramelized onions, buffalo wing sauce, blue cheese and god no, not all together. I’m kind of a purist though and sometimes epic burgers are made with the best beef, high quality cheese and your choice of lettuce, tomato and onion.
To kick these burgers up a notch, I made a spicy chipotle aioli to dress them and formed them into sliders, to keep things a little more interesting. If you’re making these bad boys for a cookout or picnic, they can be appetizers or a main dish, but either way, they’ll be eaten quickly.

- Charbroil Grill
- Cowboy Charcoal Samplers

Chipotle Mayonnaise- 1 cup mayonnaise
- 2 chipotles in adobo sauce
- 1 tablespoon adobo sauce
- ½ lime, juice
- Salt and freshly ground black pepper
Sliders- 1 to 1½ pounds ground sirloin or ground chuck
- Salt and freshly ground black pepper
- Cheese slices, your choice
- Mini burger buns
- Preheat grill over medium-high heat. While the grill is heating, form the meat into 2 to 3-ounce portions, packed tightly into rounds. Season with salt and pepper.
- Place the sliders on the grill. When the first side turns nice and crusty (about four or five minutes) flip and cook four more minutes.
- Place the slider on mini burger buns and top with chipotle mayonnaise and any other desired toppings.
